Choline is an ubiquitous vitamin. Interestingly, it makes a number of "deep-melting eutectics" with other dirt-common chemicals like Urea.

Another interesting feature of this substance is the NMR T1 of a 15N labeled analog. It is the longest I have seen for a 15N in solution. About 2 and a half minutes in H2O (not D2O). THe nitrogen is very isolated from any neighboring protons and it is a small, fast tumbling molecule.
